Zucchini and Haloumi Salad
In our household we love haloumi, it’s best served hot and goes perfectly with lamb meatballs and topped with dill yoghurt.
Method

Preheat the oven to 180 degrees.

Add the zucchini and oil and add salt and pepper to taste

Bake for approximately 30 minutes until the zucchini is soft and slightly golden.

Meanwhile, place the rocket into a salad bowl.

Add the cooked zucchini to the salad bowl.

In a Fry pan on a medium heat add a little olive oil and then add the sliced haloumi frying until golden then flip and repeat.

Add the haloumi to the salad bowl and toss well. Serve immediately.
This zucchini and Haloumi salad has a perfect blend of creamy cheese and tangy rocket, the baked zucchini pulls the salad together and it’s a great side dish to serve up with your family’s favourite main meals. It is also a lovely salad to enjoy on its own for a healthy and tasty snack! try it and enjoy!
