Veggie Filled Bolognaise Sauce
Isn’t it strange that kids can find the smallest piece of onion in any dinner they eat, but they still can’t find their shoes! Infuriating huh! Well like all Mums, I’m always trying to get my kids to eat more veggies, this is my secret weapon to get them to gobble them up – without the whinge factor.
This recipe is freezable. So to freeze, allow it to cool, then 3/4 fill a Ziploc bag. It freezes well for up to six months.
This recipe feeds four with leftovers.
Method

Grate all the vegetables except for the celery (just cut it very very finely).

Heat a deep frypan, and spray with canola or olive oil until hot.

Add the grated onion and garlic, and cook for a few minutes or until soft.

Add the beef mince. Break apart with a spoon and brown (about 10 minutes).

Add the remaining grated vegetables, and cook through for a few minutes.

Add the tin of tomatoes and tin of tomato soup. Reduce the heat, and simmer for 10 - 15 minutes or until the mixture thickens.

Serve on fresh pasta with some grated cheese.
