We have Delicious Crispy Smashed Spuds all the time at home. And the kids absolutely devour them. Smash that Spud right out of the park! Here is a new way to serve up the family staple, potato!
Method

Place water and potatoes in medium saucepan and bring to the boil, season water with a teaspoon of salt.

Preheat oven to 200 degrees.

Boil until potatoes are soft 10-13 minutes. Test with a skewer, if skewer goes through potato with ease then they are ready. Drain in a colander.

Place 4 sheets of paper towel doubled up on the bench, then fold 2 sheets of paper towel in half to create a square the size of your palm. Place a potato on the paper towel on the bench, using your small square firmly press down on the potato. It should squash flat, approximately 3cm high. Some of the potato will squish out of the skin, this is fine it will crisp up and the family will fight over those crispy ones!

Lift onto a lined baking tray using an eggflip, to keep the potato together and flat. Repeat until all potatoes are on tray.

Drizzle with olive oil and season with salt and pepper.

Place tray of flat potatoes in the oven for 15 minutes until golden brown, turning once at around 10 minutes.

- Smashed Spuds are best served hot though do make a great cold potato salad out of the leftovers!
