Vegetarian Falafel
As meat free meals are becoming more popular, Falafel is always a great go to!! It easy to make, minimal ingredients and tastes great! Add it to a wrap, make a salad, add some hummus or Greek yoghurt, Delicious!!
These balls of goodness are super healthy and are perfect for freezing for school lunches throughout the week, try them for an afternoon snack and add them to your favourite main meals! They are super filling and will leave you satisfied after every bite! Yum!

Method

Place all of the ingredients into a food processor and blitz until combined and not puree, ensure there is still texture in the mix.

Scoop a tablespoon of mixture into hands and roll into a ball and place on a tray, once all the mixture is rolled into balls place the tray into the refrigerator for approximately 30 minutes.

Heat the oil in a large fry pan on medium heat.

Cook the falafel and turn when they become golden brown.

Serve with hummus or greek yoghurt!
