  • 1 Potatoes (600 Grams) peeled, chopped
  • 500 g Cauliflower sliced
  • 1 tbsp Indian Curry Paste
  • 1 Red Capsicum chopped
  • 5 cups Vegetable Stock salt reduced
  • 1 tsp Olive Oil
  • 1 Onion diced
  • 1 tbsp Ginger freshly grated
  • 1 cup Tomatoes chopped
  • 1 cup Low Fat Greek Yoghurt
  • 1 tbsp Basil, Fresh

Hmmm This Easy Vegetable Curry is a lovely dinner option for the entire family.

It isn’t too hot so the kids should be able enjoy it as well. Also, it’s perfect for rainy days or on cold nights in the winter!

Method

  1. Heat some oil in a large pan.

  2. Add the olive oil, onion, ginger and curry paste and cook for 2-3 minutes, until aromatic.

  3. Add the potato, cauliflower, capsicum, stock and tomatoes.

  4. Stir in well and simmer with the lid on for 15 minutes, or until vegetables are softened. You can also add green peas before stirring it all together but this one is optional.

  5. Top with yoghurt, sprinkle with chopped basil and serve with rice or couscous.

Recipe Hints and Tips:

  • This curry freezes well.  Cool to room temperature and seal in a ziplock bag.  Freeze for up to two months.
