‘Say Cheese’ Chicken Roll
Ingredients
- 2 Bakers Delight Hi-Fibre Lo-GI Lunch Box Rolls
- 4 baby cos lettuce leaves
- 2 slices swiss cheese
- 2 leftover chicken tenders
- 2 tbsp whole egg mayonnaise
Method
- Cut both rolls in half, leaving partially attached.
- Place the baby cos leaves on the bottom half of each roll, followed by the sliced swiss cheese and chicken tender.
- Spread the mayonnaise evenly on the top half of the roll and close.
- Wrap or place in a lunch box.
‘Out of This’ World Rocket Roll
Ingredients
- 2 Bakers Delight Hi-Fibre Lo-GI Lunch Box Rolls
- 1 tsp dried basil
- 2 tbs whole egg mayonnaise Handful of rocket leaves
- 2 slices buffalo mozzarella
- 1 small tomato, de-seeded and finely sliced
Method
- Cut both rolls in half, leaving partially attached.
- Combine dried basil and whole egg mayonnaise in a small bowl and evenly spread on the top and bottom half of each roll.
- Place the rocket onto the base of each roll. Follow with Buffalo Mozzarella and tomato slices.
- Close the roll and wrap or place in a lunch box.
