Tapioca is most commonly recognised as squishy pearls that make up Bubble Tea and Tapioca Puddings. SAHM has come up with a unique recipe for a side dish that really brings this relatively unknown ingredient to life!
Method

Mix the milk ,tapioca, and sugar in your slow cooker with a whisk. Cover your slow cooker. Cook the tapioca on High for 3 hours.

Crack the eggs into a mixing bowl. Beat them well with a whisk. Add the vanilla to the eggs. Use a potholder to remove the lid. Use a ladle to scoop out a little of the hot milk form the slow cooker. Carefully add the hot milk to the egg mixture. Stir the hot milk form the slow cooker. Carefully add the hot milk to the egg mixture. Stir the hot milk into the eggs well.

Add the egg mixture to the slow cooker. Use a rubber spatula to scrape the bowl. Cover your slow cooker. Cook the Tapioca on High for 20 more minutes. Chill the tapioca completely. This may take 3 hours or so.

While it's chilling, use a kitchen shears to cut the grapes in half and drain the juice from the pineapple. After the Tapioca has chilled completely, stir in the grapes, pineapple, and whipped topping or cream. Serve cold.
