When it comes to ‘almost’ healthy nighttime treats, we love these Stuffed Baked Apples. Sweet and spicy, stuffed with delicious walnuts and surrounded by delightful baked apple, these are a winner for folks of all ages.
Method

Preheat oven to 190 degrees.

In a small bowl, mix together the brown sugar, walnuts, sultanas, butter and spices.

Slice the top 2cm off each apple. Using a small spoon or a melon baller, scoop out the apple's core and seeds. Don't go all the way down as you'll want to keep the bottom on them.

Set the apples out, cavity side up, in a glass or ceramic baking dish, allowing a little bit of room around each apple. Fill the apples with your spice mixture, and pop the lids on. Pour apple juice on and around the apples.

Bake for 30-40 minutes, or until apples are nice and tender. Rotate the baking dish halfway through. Feel free to baste throughout the cooking process with the pan's juices.

Serve warm, drizzled with any remaining liquids in the pan.
