We all know that doughnuts aren’t healthy, but what if there was a way to make them just a little bit healthier? You’d jump on it right?
Well then read on, because this Spiced Almost Healthy Vanilla Doughnuts that’s going to make it ok for you, and your kiddies, to have your doughnuts and eat them too, with half the guilt (or less!). There’s no deep frying to be seen, and all you’ll need to get started is the ingredients below and a doughnut pan.
Method
-
Preheat your over to about 180 degrees and prep your doughnut pan by lightly greasing it.
-
In a big bowl combine all the dry ingredients. This will be your flour, salt, baking powder, baking soda, cinnamon and all spice. Set aside.
-
In a smaller bowl whisk your egg whites and add the coconut oil (melted), honey, vanilla extract and milk. Stir these together until combined, but do not over-stir.
-
Pour your wet mixture in with your dry ingredients and mix it well.
-
It's now time to fill your doughnut pan. The easiest way to do this is using an icing bag, or even a sandwich bag with the corner cut off. This gives you more control over how much mix you're putting into the doughnuts. It's important that they're even and you do not overfill the pan.
-
Bake in your preheated oven for 15 - 18 minutes, or until the doughnuts look golden.
-
Take out of the oven, and allow to cool in the pan for five minutes.
-
Tip out and prepare icing.
-
In a saucepan on medium heat melt the coconut oil. Then add in the muscovado sugar and stir until the sugar has fully melted into the oil.
-
Add in the cocoa powder and get the pan off the heat.
-
Then add the milk and stir through until the mix becomes smooth. You can add more milk if you think the mixture is too thick, or more cocoa powder if it looks too watery.
-
Ice the doughnuts by dipping them into the chocolate icing and laying them on a plate to set. Toss some sprinkles on top if you want, before the chocolate icing has fully cooled.
