Slow cooker Caramel Glazed Chicken is a very frugal Asian style dish that you can let simmer away in the Slowcooker – and make you hungry wayyyyyy before dinner time!
Delicious served on a bed of jasmine rice and salad with a sprinkling of peanuts on top!
Method

Make caramel sauce by heating oil in a small saucepan over medium heat, then add ginger and garlic.

Cook for 1 minute then add soy sauce and sugar.

Cook, stirring, for about 3 minutes or until sugar has dissolved.

Add the fish sauce and sherry then reduce the heat to low.

Simmer for 5 minutes or until the sauce has thickened to a syrup consistency.

Place the chicken in the slowcooker, add the sauce and lemongrass and mix until well coated.

Cover and cook on low for 5 hours or until the chicken is cooked through and tender.

Garnish with toasted peanuts and serve with a salad or steamed rice.
Recipe Hints and Tips:
- Slowcooker Caramel Glazed Chicken is not suitable for freezing.
- For a thicker sauce, add a little cornflour.
