This Slow Cooker Greek Chicken is an easy dish for the family to enjoy and will easily become one of their favourites.

Method

Lay carrots, potatoes, mushrooms and Capsicum over the bottom of a large slow cooker.

Arrange chicken on top of the vegetables.

Bring stock, wine, garlic and salt to a simmer in a saucepan.

Pour the liquid over the chicken and vegetables.

Cover and cook until chicken is cooked through for about 2 hours on high or 4 hours on low.

Add Artichokes and cover and cook on high for 5 minutes.

Whisk egg, egg yolks and lemon juice in a medium bowl.

Take out chicken and cover to keep warm.

Take 1/2 a cup of cooking liquid whisk into the egg mixture, until smooth.

Add the mixture back to the liquid in the slow cooker.

Cover and cook whisking 2 or 3 times, until slightly thicker.

Add dill an pour the sauce over the chicken and vegetables to serve.
