Slow Cooker Coconut Curry Sausages
We have Slow Cooker Coconut Curry with Pork Sausagesat least weekly in the colder weather. It is so delicious and hearty and frugal! It will easily feed a family for under $10 and freezes well too!
Method
Put the sausages, onion and vegetables into the slowcooker (you choose whether to chop up the sausages or leave them whole). Mix the curry powder and coconut cream together and pour on top.
Mix it all and cook on low for about 6 hours.
Serve with rice or over pasta.
Recipe Hints and Tips:
Slowcooker Coconut Curry Sausages freezes well. Allow to cool to room temperature, 3/4 fill a ziplock bag and freeze for up to four months.
