Quick, simple, 5 ingredients, healthy, 10 minutes and you’re eating! Oh more importantly it tastes great.
Method

Boil kettle, pour 1 1/2 cups of boiling water over cous cous in medium bowl.

Place lid on or cover with cling wrap allow to stand for 5 minutes.

While cous cous is soaking, roughly dice olives, sundried tomato and cheese, drain tuna and add all ingredients into large bowl.

Once 5 mintues is up remove lid from cous cous and toss through the remaining ingredients until mixed.

Serve with a drizzle of mayonnaise or on it's own.
Recipe Hints and Tips:
- Simple Antipasto Cous Cous is not suitable for freezing though can be stored in fridge in an airtight container for up to 2 days.
- To make this even easier you can buy the antipasto mixes from the deli section at your local supermarket then it would be 3 ingredients for a fast healthy lunch or dinner!
