Savoury Mashed Pumpkin Slice is delicious served with a roast dinner instead of the traditional baked pumpkin.  It’s also a good snack and a great way to use up leftover pumpkin mash.

Method

  1. Mix pumpkin, onion, milk and eggs together in a bowl.

  2. Pour into a greased shallow baking dish.

  3. Sprinkle with grated cheese and breadcrumbs and dot with a little butter.

  4. Bake at 180 degrees for 30 to 35 minutes or until slightly browned on top.

  5. Slice into squares and serve hot.

  • Savoury Mashed Pumpkin Slice is not suitable for freezing.
