Savoury Mashed Pumpkin Slice is delicious served with a roast dinner instead of the traditional baked pumpkin. It’s also a good snack and a great way to use up leftover pumpkin mash.
Method
Mix pumpkin, onion, milk and eggs together in a bowl.
Pour into a greased shallow baking dish.
Sprinkle with grated cheese and breadcrumbs and dot with a little butter.
Bake at 180 degrees for 30 to 35 minutes or until slightly browned on top.
Slice into squares and serve hot.

Savoury Mashed Pumpkin Slice is not suitable for freezing.
