  • 1.5 cups Self Raising Flour
  • 3/4 tsp Salt
  • 3 tbsp Butter
  • 3/4 cup Milk
  • Parsley chopped
  • Cheese & Polenta Dumplings
  • 3 cups Water
  • Pinch Salt
  • 1 cup Polenta
  • 1 tbsp Butter
  • 1 cup Cheddar Cheese grated
  • 1 Egg beaten
  • 1/4 tsp Paprika

Savoury Dumplings are tasty bread or scone like morsels cooked on top of casseroles and stews so the bottom absorbs the delicious flavours the the top is all crusty and delicious.  They are cheap to make and a great way to make your meal stretch even further.  Here are a few different sorts.

To cook dumplings – make them up according to the directions below, and spoon them onto the top of your stew/casserole twenty minutes before serving.  Make sure your oven is hot!  Dumplings aren’t suited to be cooked in the slow cooker!

 

 

Method

  1. Sift the flour and salt together in a bowl.

  2. Add the butter and pinch it through until the mixture is like breadcrumbs.

  3. Stir in the milk and parsley.

  4. Mixture will be quite wet and sticky.

  5. Drop round tablespoons of the mixture onto the top of the casserole and cook for 8 - 10 minutes or until they are golden.

  6. For a cheesy version, add a 1/4 cup of grated cheddar cheese.

  7. Pour the water into a small saucepan and bring to the boil.

  8. Add the salt and polenta and reduce the heat to low.

  9. Simmer until the mixture has thickened stirring constantly (about 15 minutes).

  10. Remove the mixture from the heat and beat in the butter, cheese and egg.

  11.  Let the mixture cook for about 15 minutes.

  12. Form into about six dumplings (depending on how big or small you want them) and carefully arrange them on top of the casserole.

  13. Cook for 30 minutes.
