Now, I’m not a big fan of lettuce, so for years I never tried Sang Choy Bow because I thought that is all you could taste.
Imagine my surprise when I did finally taste it – now it is a ‘Friday Night’ food with things like tacos or pizza – and the kids love it! I love food you can eat with your hands!
Method

Heat your frypan or wok and add the oil.

Cook the onion, capsicum, garlic and grated ginger together until soft and fragrant.

Add the chicken or pork mince and stir fry until browned and cooked through.

Add a splash of water to the mince and pour in the sauces.

Cook until slightly thickened.

Turn off the heat and throw in the bean sprouts and add the lime juice.

Spoon into the freshly washed lettuce leaves (or put it on the table and let everyone help themselves) and top with the spring onions to serve.

Sang Choy Bow is not suitable to freeze,.

You can freeze the mince mixture before adding the bean sprouts. Mince mixture is suitable to freeze for up to four months.
