This simple Greek Salad is easy to prepare and bursting with delicious flavours that will have everyone wanting more! Traditional Greek Salad always contains fresh tomatoes, feta cheese and black olives. You can grab a small tub of black olives from the deli section of your local Supermarket. The deli olives are a bit nicer than the long live ones you get in the condiment section of the supermarket.
Even better – get your olives from the local markets in your area. There are quite a few people who marinate olives and sell them by the kilogram and they are just wonderful!
Spanish Onions are the purple onions – you get them in most supermarkets. Choose a nice firm medium-sized onion and ensure you slice them nice and thinly.
Even though this is a Greek recipe – I prefer using Danish Feta – it is a bit softer and when mixed in a salad it almost makes its own sauce. But that is personal taste. Greek Feta is firm and will retain its shape.
Method

Wash the lettuce leaves well. Lettuces such as rocket or Mesclun are good choices.

Rip them gently with your hands and lay them on the platter.

Get a small screw top jar and add the extra virgin olive oil and the red wine vinegar. Give it a good shake to combine and set aside.

Roughly chop the tomatoes, olives, feta, onion and cucumber and arrange neatly on the lettuce.

Just before serving, pour over the dressing.

Season with salt and pepper
