  • 1 Wombock Cabbage - Finely Chopped
  • 6 Shallots finely chopped
  • 1/2 Onion, White very finely chopped
  • 1/4 Celery finely chopped
  • 100 g Slivered Almonds or pine nuts, lightly toasted
  • 100 g Fried Noodles (there are a few varieties- including a gluten free version)
  • Dressing
  • 1/4 cups White Vinegar
  • 1/4 cup Sugar, Castor
  • 1 tbsp Soy Sauce
  • 2 tsp Sesame Oil
  • 1/3 cup Olive Oil

I loooooove this quick Asian Noodle Salad so much – it is simply divine!

In fact, I love all Asian food – their combination of flavours and colours is masterful and they’re not expensive at all to make at home!

Asian Noodle Salad is filled with flavourful ingredients that all contain nutrients that are good for the body.

Method

  1. Combine all the top ingredients together (except for the noodles) in a bowl and combine well.

  2. In a small saucepan, heat all the dressing ingredients together over low heat and stir until the sugar has dissolved.

  3. Refrigerate until ready to use. Pour over salad and mix well.

  4. Sprinkle the crunchy noodles over wombok mix and serve immediately.

Recipe Hints and Tips:

  • Quick Asian Noodle Salad is not suitable for freezing and best served immediately.
  • If you would like to prepare this earlier, then prepare the salad without the noodles and make the dressing and keep in the fridge. Then just before serving, sprinkle the noodles on and heat the dressing for 30 seconds in the microwave, shake well and pour over the salad to serve.

This is a great side dish to baked chicken legs (or Honey Chicken is even better).  Great to take to parties as you can make it in bulk.

Asian noodle salad is a delicious, healthy dish that can be made in minutes. The key to this quick and easy recipe is to use pre-cooked noodles. I like to use brown rice noodles, but you can use any type of noodles you like. Just cook the noodles according to the package directions, then rinse them with cold water and drain them well.

In a large bowl, combine the cooked noodles with shredded carrots, chopped red pepper, green onions, and cilantro. For the dressing, I like to mix together sesame oil, rice vinegar, soy sauce, honey, and chilli garlic sauce. Just whisk the ingredients together until they’re well blended, then pour the dressing over the salad and toss everything together until it’s evenly coated.

This salad is best served cold or at room temperature. It’s perfect for a light lunch or a side dish for a more hearty meal. And it’s so good that you’ll want to make it again and again!
