Rocky road might be a dessert that is most often eaten at Christmas time, but you can enjoy these Rocky Road Muffins all year around. Combining all your favourite flavours from the traditional rocky road dessert, these muffins are sweetly satisfying with every bite!

Method

  1. Preheat oven to 180 degrees and prepare a 12-hole muffin pan by lining with paper cases. Using paper cases is easier than spraying the tray as the marshmallows can cause the muffins to stick.

  2. In a large bowl combine the flour, cocoa, sugar, mini marshmallows and white chocolate chips. In the centre of this mixture create a hole.

  3. Then in another bowl or jug whisk together the coconut oil, eggs, milk and vanilla. Add this to the well you have made in the dry mixture, and stir until just combined. Then spoon into paper cases.

  4. Bake for about 25 minutes, or until muffins are firm to touch. Leave in the pan for around 5 minutes before transferring to a rack to cool.
