A delicious and healthy slice, perfect for school lunch boxes or just a sweet ‘grab and go’.

This egg free, dairy free, gluten free and no added sugar Raw Apricot Slice is a healthy substitute for muesli bars in the kids lunch boxes!  It is nice and easy to make and good if you’re eating clean!

Raw Apricot Slice is perfect for school lunches, if you have a nut-free school, just substitute the almond meal for wheatgerm or just leave it out completely!

Method

  1. Place the dried apricots in a jug and cover with water.

  2. Let them soak for an hour and then drain.

  3. Place all the ingredients into a food processor and pulse until the mixture is of a breadcrumb type consistency.

  4. Press the mixture into a lined slice tray and sprinkle with a little additional coconut.

  5. Chill for three hours or overnight.

  6. Cut into slices and serve as required.

Recipe Hints and Tips:

  • Raw Apricot Slice is suitable to freeze for up to two months.
  • Coconut Oil is readily available at most supermarkets or health food stores.
  • To make this recipe nut-free, substitute almond meal with wheatgerm.
