  • 12 Baby Chat Potatoes
  • 2 tsp Salt
  • 3 cups Water
  • 12 Toothpicks

I can’t believe how something so simple is so freaking tasty. Excellent as starters for a meal or party!

Method

  1. Preheat oven to 200 degrees. Pour cold water and salt in large saucepan, add potatoes. Heat and bring to the boil. Boil for 10 minutes until just soft. You can test by pressing a skewer in, it should be very easy to pierce. Drain potatoes. Allow to cool slightly. Cut each slice of Prosciutto in half lengthways and set aside.

  2. Wrap one strip of Prosciutto around each potato and keep together with a toothpick. Place on a baking tray lined with baking paper. Repeat until all potatoes are wrapped. Spray the ends of each potato (this will help it crisp up) and lightly season with cracked pepper.

  3. Place tray in oven and bake for 15-20 minutes until golden and crisp. Remove from oven and serve with your favorite BBQ meat and salad or have these as part of your baked dinner.

Recipe Hints and Tips:

  • Prosciutto Wrapped Spuds are not suitable for freezing, then can be kept in refrigerated for up to 5 days in an airtight container.
  • Serve with sour cream and sweet chilli sauce to make a quick and delicious meal!
