We love a good brownie, even more when there’s almost no dishes to do as with this One Bowl Blueberry Brownie. Before we found this recipe, we’d never even thought of adding blueberries into brownie batter, but now we’re blueberry believers! The fruit adds such a wonderful depth of flavour to these brownies, as well as little pockets of blueberry goodness!
Method

Preheat oven to 180 degrees and prepare a baking pan around 20x25 in size.

Have the butter melted in a large bowl, and stir through the cocoa and the coffee while butter is still warm.

In the same bowl, add the sugar, eggs and vanilla extract.

Fold through the flour, baking powder and salt, then add the blueberries and stir lightly to distribute.

Pour the brownie batter into the prepared pan, and bake for 20-25 minutes, or until a toothpick inserted in the middle (avoiding blueberries) comes out clean.

Allow to cool prior to cutting.
