  • 185 g Butter at room temperature
  • 1/2 cup Caster Sugar
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 1.25 cups Self Raising Flour
  • 1/2 cup Coconut
  • Filling
  • 60 g Butter
  • 3/4 cup Icing Sugar
  • 1/2 tsp Vanilla Extract
  • 2 tsp Milk
  • Raspberry Jam

Homemade Monte Carlos beat shop-bought ones any day! Fun, easy to make and taste delightful.

You can make them for any occasion!

Method

  1. Cream together the butter and sugar until light and fluffy.

  2. Add the egg and vanilla extract and beat well.

  3. Sift the dry ingredients well and fold into mixture.

  4. Roll teaspoons of the mixture into balls and place on a lightly greased baking tray, press down lightly with a fork.

  5. Try and keep all the biscuits a uniform size.

  6. Bake at 180 degrees for 10 - 12 minutes or until golden.

  7. Remove and cool on a wire rack.

  8. Cream the butter and icing sugar together until light and fluffy.

  9. Add the vanilla and gradually add the milk and beat well.

  10. To assemble the biscuits, put a teaspoon of jam in the centre of the bottom half of one biscuit and a teaspoon of the cream on the other.

  11. Sandwich together with a slight twist.

  12. Keep in an airtight container for up to five days.

  • Monte Carlos is not suitable for freezing.
