Blanch the spring onions, carrot, and cabbage by placing them in boiling water for a minute. Drain the hot water and then drop the veggies into a bowl of cold water just for a moment. Pat them dry with a paper towel and place in a mixing bowl (large) with the breadcrumbs, herbs, ham, onion, and chicken. Mix and set to the side.

Preheat your oven to 190 degrees. Cut each Filo pastry in half lengthwise and trim down to a strip that measures 36 x 12 cm. Melt the butter and mix it with the olive oil.

Brush a Filo pastry strip with the oil/butter mix and then place one eight of the chicken filling mix on one edge. Roll up the pastry with the filling inside, crimping in the outside edges as you go so that it resembles a spring roll. Place it in the baking tray and brush some oil/butter on the top. Repeat for the rest of the parcels.

Use a fork to score some slices diagonally on the top of each parcel, sprinkle on some sesame seeds, and place in the oven until the pastry turns golden, about 30 minutes.

While this is cooking, take all the ingredients for the cranberry relish and put them in a jar and shake.
