We are always looking for a quick and easy lunch that is healthy too, Mexican Tuna ticks all the boxes.

 

Method

  1. Pour can of mexi beans into bowl.

  2. Drain tuna and spoon on top of mexi beans.

  3. If you would like it hot place a sheet of paper towel over bowl and heat in microwave for 30seconds, you may have to heat for an additional 30 seconds depending on microwave.

  4. Serve and enjoy this fast and healthy lunch.

Recipe Hints and Tips:

  • Mexican Tuna is not suitable for freezing, you can store in fridge in an airtight container for up 2 days.
  • Mexican Tuna can be served hot or cold. If you need you can add a dollop of sour cream and a sprinkle of grated cheese though it's not quiet as healthy. The bean mix does have a little chilli kick it.
