Mexican Street Corn Salad
This salad is the perfect blend of Ease and Taste! Add it’s with your taco’s or some pork cantina’s, it will please anyone and everyone!
Mexican styled dishes are always a family favourite for dinner, this recipe is perfect as a side dish to your most loved Mexican main or just by itself for a healthy and tasty option for lunch the next day. Don’t forget to top the salad with some feta and a squeeze of lemon for extra flavour!

Method

Add the corn kernels and olive oil to a fry pan and slightly brown corn for 2-3 minutes.

Remove the corn from the heat.

In another bowl add the Jalepeno's, minced garlic, cumin, mayonnaise, lime juice and cayenne pepper and mix well.

Add the corn, red onion and coriander to a bowl. Top with salad dressing and mix well to combine. Top with feta and serve!
