I’m a big fan of Pork Loin Roast, there is no waste as there is no bone, and it is easy to stuff which makes it go so much further.
Of course, if you have a piece of pork with the bone in, you can certainly use it.
When meat is cooked in the slow cooker, it is so moist and delicious – plus this takes a lot of work out of cooking, meaning you have more time on Christmas Day for other things… Like wine!
The tartness of the cranberries and spices in this dish make it taste like Christmas Day and will make your home smell amazing.
To ensure you have enough meat for everyone, the rule of thumb is to allow about 200 grams of roast per person. So 1.6kg pork roast will feed six people.

Method

Preheat the slow cooker to LOW. Place an upside-down saucer on the bottom (this keeps the roast up off the bottom of the slow cooker).

Season the pork loin roast and place it carefully on the saucer.

Season with salt and pepper.

Combine the remaining ingredients, and pour over the top of the roast.

Cover and cook on LOW for 7 hours.
Recipe Hints and Tips:
- To thicken the cranberry sauce to use as a gravy, pour the sauce into a saucepan and cook on low with a teaspoon of cornflour dissolved in water. Once thickened, pour over the sliced pieces of pork.
- If you like your pork crackling crispy, remove it from the pork once cooked and place it under the griller for approximately 10 minutes (careful it doesn't burn).
