Mint Marinated Lamb Chops with Super Easy Mint Sauce
Growing up with my part-Pom dad, a week did not go by without a lamb roast on a Sunday night. And my mum made a wicked lamb roast.
The meat was burnished on the outside and tender and delicious inside. We all fought for the shank and burnt bits on the outside of the leg yes it was always a leg!
Method

Combine all ingredients in a jug or jar and mix well.

Taste for sweetness, if you like mint sauces a little sweet you can add more sugar.

Combine oil, dried mint, salt, pepper and garlic in a marinating dish.

Coat the lamb with the marinade and leave it in the marinade for a couple of hours. (If you don't have a couple of hours 30 minutes will do it).

Preheat a grill pan or BBQ over high heat and grill chops until cooked to your liking. Generally, a few minutes per side will do it if you like them a little pink. Make sure you grill the outside layer of fat too!

Rest the chops for about 5 minutes then serve with Broccoli and Potato Mash and your fresh Mint Sauce!
There was also, without fail, mint sauce! The old-school McCormick’s mint sauce in the little fat-bellied glass bottle with the green lid! That shit has not changed since I was a kid and I bet it hasn’t changed since he was a kid!
While you will always find a bottle of that in my pantry, we prefer a fresher version, and since my herb planter box is overrun with mint, there is never a quick cheat’s mint sauce far away.
