Remember though when cooking chicken mince that if you are using all breast that can give you a bit of a ‘dry’ result, so use a combination of both white meat and brown meat. White meat is the chicken breast and rib. Brown meat is chicken leg and thigh. The brown meat has a bit more fat and a lot more flavour.
