Adding more vegetarian meals into your family’s diet isn’t just good for their health, it can also be fantastic for your hip pocket. Many people believe that vegetarian meals, owing to the fact that they contain no meat, are more difficult or time consuming to cook. Absolutely not! In fact vegetarian dinners are often just as easy, or easier, to throw together than a dinner containing meat. To prove this to you once and for all, we’ve put together a few of our favourite Meat-Free Monday dinners, all of which can be on the table in 30 minutes or less.
Chickpea Curry In A Hurry
This easy speedy dinner is fantastic for Meat-Free Mondays when you have little time to spare. Chickpeas are easily available canned, and are very affordable. Along with that they’re a source of zinc, folate and protein, are low in fat, and may help to lower your cholesterol. This spicy number brings together chickpeas and a few simple vegetables and spices (which you can flexible change to suit you) for a super yummy curry that will suit any tummy.
Moroccan Mushrooms And Couscous
The flavours of Morocco really speak to us, and while the country is known for its meat dishes, this vegetarian meal is still sure to impress. Moroccan food is loved for its ability to mix sweet and savoury flavours, and this is certainly true for this dish. Dried fruit and honey pair effortlessly with spices and mushrooms in this super simple but flavourful dinner, and the creamy couscous rounds the whole thing out. Yummy!
Vegetarian Meatballs and Zoodles
If you’ve never attempted to make your own vegetarian meatballs before, they’re just as easy as meaty meatballs and they still taste amazing. This variety of vegetarian meatballs is really simple, with just beans and ground almond as the base, and lots of flavour added in on top. They’re served in a delicious tomato-based sauce with zoodles, a.k.a. zucchini noodles. Of course you could serve them with regular pasta too, it’s your choice!
Quinoa Zucchini Dill Fritters With Feta
Fritters are great for lunches, but we also love them for dinner on Meat-Free Monday. These Quinoa Zucchini Dill Fritters with Feta are just packed with flavour, and super healthy and filling. Zucchini is the core vegetable here, while the quinoa replaces any flour that would go in meaning these fritters are far from stodgy and have no oily aftertaste. For kids use a mild feta if you’re unsure whether they’ll like it, but dill is the flavour powerhouse so they might not notice!

Pesto is so easy to make at home for anyone who has a food processor, you’ll be kicking yourself for ever buying it at the shop. Having a few homemade pesto options up your sleeve means that when Meat-Free Monday rolls around, you’ll be ready to go in getting dinner on the table in under 30 mins. We love a good basil pesto, but we also have a lovely parsley and macadamia recipe for you to try. Just whip it up in a processor and stir it through pasta. Simple and done!
Vegetarian Sausage Rolls
Sausage rolls are always a hit with kids, and if you don’t let them in on the fact that these are vegetarian, it’s a Meat-Free Monday secret they probably won’t work out on their own. These simple vegetarian sausage rolls are on the table in under 30 minutes and they taste great. The filling is affordable and kid-friendly, with simple flavours that you can add to with spices if you want. Basically, they’re an all around winner.
Warming Vegetarian Coconut Curry
We love a good curry for Meat-Free Monday, and this lentil coconut curry definitely fils the bill. For those cooler nights, this recipe is one to remember, and it comes together in under 30 minutes, which is a bonus. All you’ll need is a large pot, a basic collection of vegetables, some nice warming spices, and that incredible coconut milk, which brings the entire thing together.
