Slow Cooker Barbecue Pork Roast – I’m usually not a fan of doing pork roasts in the slow cooker, only because they are so good in the oven with crackling and all the trimmings.
But I’ll make an exception for this one – it’s delicious!
You can serve it up with fried rice, or with tacos shells and salad or my personal favourite on a bun with crunchy Asian coleslaw.
Method
-
Place the thinly sliced onions on the bottom of the slow cooker and sprinkle the flour over the onions.
-
Place the pork roast on top.
-
In a cup combine the barbecue sauce, chili powder, cumin and garlic.
-
Smother the sauce over the roast.
-
Cover and cook on low for 8 hours.
-
When the roast is cooked, slice and place on the plate and smother in the slow cooker sauce.
-
Serve with fluffy mashed potato and seasonal veggies.
-
To serve on a bun, shred the roast and reheat with the sauce - delicious!
