Ingredients

  • 1 cup Dates chopped
  • 170 g Wholemeal Self Raising Flour
  • 1/2 cup Apple Puree
  • 1/3 cups Walnuts (chopped Roughly)
  • 1 tsp Bicarb Soda
  • 1 tbsp Butter
  • 1 cup Water boiling

Low Fat Date Loaf

This Low Fat Date Loaf is my beautiful Mum’s recipe.  I quite often will have a slab for breakfast in the morning (with loads of butter – I know it’s low fat but I can’t help it!)

I had forgotten how totally mouth watering it is!  Give it a try!

 

Method

  1. Grease a loaf tin well with butter or canola oil.

  2. Preheat the oven to 180 degrees (160 if you have a Fan Forced oven).

  3. Place dates, apple puree, nuts, butter, bicarb and salt into a bowl.

  4. Add the boiling water and allow the mixture to stand until it is room temperature.

  5. Add the sifted flour and stir to combine.

  6. Pour into the loaf tin and bake for 25 minutes.

  7. Serve with butter and jam.

Recipe Hints and Tips:

  • Low Fat Date Loaf is suitable to freeze for up to 2 months
