
Stuck for ideas on how to use the left over ham? Christmas Spuds make a great filling meal.
Method

Preheat oven to 160 degrees.

Pour 4 cups salted water in large saucepan, spike potatoes with a fork all over to prevent splitting. Add potatoes to pot and bring water to the boil, rapidly boiling for 10 minutes.

Drain and place each potato in a serving bowl, cut into quarters. Top with coleslaw, ham, sour cream, grated cheese and sweet chilli sauce.

Place into oven at 160 oC for 10-15 minutes until melted or microwave on high for 1 minute 30 seconds until cheese melts.
Recipe Hints and Tips:
- Christmas Spuds are not suitable for freezing.
- You can use any salad you have leftover from garden to rice salads & it doesn't matter if they are alittle soggy.
