Knock-Off Subway Biscuits
Ever tried the biscuits at Subway? Seriously they ROCK! They are sweet and chewy and crunchy with the perfect amount of chocolate to biscuit ratio. I think these Knock-Off Subway Biscuits version is a pretty darn good recipe and you can freeze the dough so you can have fresh biscuits anytime.
Method

Line two baking sheets with baking paper. Cream the butter with the brown and white sugars until well blended. Stir in the vanilla extract and add the egg. Sift together the flour, baking powder and salt and fold into the mixture. Add the chocolate chips of your choice.

Gather the dough into a loose ball and cover with plastic wrap and place in the fridge for at least an hour.

Form into rounds the size of a golf ball and place 3cm apart, on the baking sheet. Bake in a preheated 180 degrees until just lightly brown around the edges (14-16 minutes). Too much cooking will make cookies hard. Cool on racks. They may seem a little underdone, but will firm up as they cool. Enjoy!
Recipe Hints and Tips:
- To freeze the dough, roll into the golf ball sized balls and place on a baking tray and put into the freezer. Once firm, pop them into a ziplock bag until ready to use. Will freeze well for up to two months.
- To cook from frozen balls, preheat the oven, add the balls to your baking tray and pop right into the oven. They do not require defrosting, but it is important to have the oven preheated.
