This has to be one of the really easiest recipes for making Ricotta Gnocchi, it is so easy even the laziest cook can make it!
Ricotta Gnocchi – like all home made gnocchi – is time-consuming to make at home. But it is fun to make and it is so delicious – try it with a burnt butter sauce with a little bit of fresh garlic and top with parsley – there is nothing better!
Method

Combine all ingredients, except ¾ cup of the flour, in a large bowl.

Mix together by hand until it forms a ball.

Place dough bench top sprinkled with the extra flour and lightly knead until no longer sticky.

Do not over-knead.

Break it up into handful portions and roll into little sausage shapes.

Cut into 1.5 cm pieces.

Spread onto a tray sprinkled with flour and refrigerate 20 to 30 minutes.

Boil a large pot of water.

Cook gnocchi in boiling water and remove as soon as they start floating to the top.
