Herby Cous Cous Salad
Who doesn’t love a quick filling salad that goes with everything! Its super fresh and tasty! I like to cook my cous cous I stock instead of water adding that extra flavor. Anyway you serve this salad either on its own, as a side or stuffed into a capsicum for roasting, it is sure to be a winner.
Take it to work the next day or use it with other dinners throughout the week, try out this herby cous cous salad!

Method

Cook the cous cous as per packet instructions (using stock instead of water).

Fluff the cous cous with a fork.

Add all of the other ingredients.

Squeeze over the lime juice and add some pepper if desired.

Toss well.
