I have to be honest here, I hate doing the dishes. It’s so annoying when recipes require half the pots and pans in your kitchen to be put to work, and then washed up after! That’s why I love this Healthy One-Pan Honey Lemon Chicken, a family favourite among even picky kids. It’s the perfect mix of sweet and sour, healthy for parents and kids, and it tastes incredible!

Toss the soy sauce, rice wine vinegar and chicken pieces into a large container or zip lock bag and put in the fridge. Make sure the chicken is well coated in the marinate, and leave for between 10 minutes and several hours.

Once the chicken is marinated enough for your tastes remove it from the fridge, drain the liquid, and put the chicken in a bowl. Sprinkle with salt and pepper to taste.

In another bowl bring together all of the ingredients for the Honey Lemon Sauce, whisking until they are well combined.

Heat the oil in a large pan on medium heat, then add the chicken and cook for 5 minutes or more until the meat is cooked through. Make sure you stir the chicken and turn it for even cooking. Don't take the pan off the heat, but remove the chicken with a slotted spoon and put on a plate.

Pour the honey lemon sauce mix you've whisked into the pan and cook on medium to high heat for about 2 - 3 minutes. The sauce should reach a low boil and start to thicken. If the sauce doesn't taste quite right, add extra honey or lemon.

Get the chicken back into the pan with the thickened honey lemon sauce and toss evenly. Then remove the pan from the heat and plate the chicken up. You can add sesame seeds or spring onion over the chicken, and we love it best served with rice.
Recipe Hints and Tips:
- This meal is veggie friendly! You can add lots of additional vegetables into this meal, including capsicums, pineapple, carrots, snow peas and asian greens. Just cut them small and add them when the chicken is cooking, but after the meat is brown and sealed and stir fry for a moment. Then, follow the recipe as normal.
