If you are just starting on the Paleo train, then this Healthy Bone Broth is a good place to start, that is if you can get past the chicken feet!
Method

Roast the marrow bones in the oven for 30 - 45 minutes at 180 degrees.

Fill the slow cooker with cold water, not too full as you need to put ingredients in.

Add 3 or 4 tbsp of apple cider vinegar. Rest the bone in the water after they have roasted for around 30 minutes. This will help extract all the gelatine from the marrow and bones, it's the most nutritious part.

Once rested, add the chicken bones (optional) and the veggies.

Cook on high for 1.5 hours, then put on low for 8 hours.

Make sure all the bones are covered with water. (If you use chicken bones remove them after 24 minutes). You can add water as it cooks if you like, but make sure it's boiling water.

The first few hours of simmering, you will need to skim the impurities that float to the surface with a fine-mesh skimmer. Discard.

The longer you cook the stock the richer and more flavourful it will be. About 10 minutes before finishing the stock add fresh herbs depending on your preference.
Recipe Hints and Tips:
- This Healthy Bone Broth can be frozen for up to three months.
- Once done remove bones and strain it in a very fine strainer and place in fridge in a container. All the fat will solidify on top, remove it with a spoon and keep the jelly broth underneath if you like.
