Hassle Back Potatoes

Potatoes are funny things, you can have the same type of potato cut all different ways and tastes different every time. These Potatoes are fun and look great  on your Christmas lunch table.

I love hassle back potatoes as they are crispy yet creamy delicious. Super quick and easy to make and chuck in the oven, the kids can even help with this recipe because its super simple, serve as a side dish to your favourite family roast dinner.

Hassle Back Potatoes

Method

  1. Using a sharp knife cut 3/4 way through the potato on one side, closely together

  2. Place them in the roasting pan, drizzle with olive oil

  3. Sprinkle with salt and pepper and add rosemary

  4. Roast for approximately 45 minutes or until golden and crispy on top
