
Gruyere Cheese is a very smooth cheese to cook with and has a nice tang to it without being too harsh. A delicious savoury biscuits for the summer time BBQ.
Method

Preheat oven to 170 degrees.

Using an electric mixer beat butter until light and creamy. Sift flour, cayenne pepper, paprika, dry mustard and black pepper together and stir through butter.

Add egg yolks and gruyere cheese and press together using your hands.

Lightly flour your bench and roll dough out to a nice thin crust, about 2-3 mm thick. Cut out shapes using a cookie cutter and place onto a lined baking tray.

Brush each biscuit lightly with egg white, using a pastry brush or finger tips.

Lightly sprinkle each biscuit with either sesame or caraway seeds.

Bake for 15-18 minutes, cool on a wire rack.

- Gruyere Savoury Biscuits, store in airtight container and can be frozen for 6 months.
- You can also use poppy seeds as a topping.
