If you’re looking for a fantastic summer recipe, then Grilled Chicken Breasts With Lime Sauce is it. Super simple grilled chicken with a gorgeous lime sauce that will absolutely blow your socks off. We serve ours with a garden salad, but you could put this combo with just about anything. It’s ideal to bring along to a summer BBQ or just make yourself at home!

Grilled Chicken Breasts With Lime Sauce

Method

  1. Put each of the chicken breast halves in between two sheets of strong plastic wrap and using a meat mallet or small skillet pound them until they're just less than 1cm thick. Season with salt and pepper.

  2. Spray a grill pan (you can use a normal pan but the chicken might have a slightly different texture) with cooking spray and heat on a medium-high heat. Add the chicken and cook for a few minutes on each side, or until browned. Set the chicken aside, but do not drain the liquid from the pan.

  3. In the same pan, add the chicken broth, sugar, 2 tbs of the lime juice, and the mustard. Cook on a medium heat, scraping the pan to get some of the browned chicken off if any remains.

  4. Mix together the water and cornstarch in a small bowl until smooth. Add the cornstarch to the pan and bring to a boil on a medium-high heat. Cook for a minute or so, until the sauce thickens. Whisk through the rest f the lime juice and the butter, stirring until the butter is melted and well combined.

  5. Serve chicken with sauce on the side or slathered on top.
