Gluten Free French Onion Soup. You all know how much we love our slow cooker recipes over here at SAHM, well here’s one that is also gluten and egg free! Perfect for these freezing cold nights in, or even as a take-to-work lunch!
Method

Peel and cut the onions into half moons and place in the slow cooker.

Add garlic and toss with oil.

Cover and cook on high for 8 hours.

Place the chicken and beef stock in the microwave or on the stove top and heat through.

Add to the onions in the slow cooker.

Sprinkle parsley, thyme and bay leaf into soup mix, cover and cook for a further 20 mins.

Remove the bay leaf, add salt and balsamic vinegar.

Just before serving the soup, preheat your grill and toast the slices of bread.

Sprinkle with cheese and toast again until the cheese has melted. Ladle soup into bowls and top with bread and cheese.
