Gingerbread is such a classic Christmas dessert, but if you want to mix things up a little bit you can’t go past these Gingerbread Muffins. They’re a twist on the classic, but they’re just the perfect treat to whip up around Christmas time, and a guaranteed winner for any group.
Method
Preheat an oven to 180 degrees and line 10 of a 12-hole muffin tin with paper cases.
Pour boiling water into a bowl. Add the syrup and bicarb, mixing well. Allow to cool.
To this bowl add the oil and the eggs. Mix until combined. Then add the sugar and mix.
Sift the rest of the ingredients into the bowl, and stir until combined.
Divide evenly in the muffin pan. Depending on how big your pan is, you may make 12 or 18. Bake for 15-20 minutes. Dust with icing sugar prior to serving.
