OId Fashioned Mango Chutney
Old Fashioned Mango Chutney is delicious and makes for a great gift, too!
You will need an extra large stock pot to make this whole batch! My parents and grandparents (all from North Queensland) would always use this recipe to use up the glut of ripe mangoes in the backyard every year.
Method
Peel and cut the mangoes into small pieces.
Cut up all other ingredients finely.
Put into a large stock pot and cover with the brown vinegar, salt and sugar. Bring to the boil.
Boil for approximately two hours or until liquid is thickened.
Pour the hot liquid into sterilized jars and seal well. This will make about seven standard sized jars.
