There’s nothing better in our books than whipping up a delicious batch of rocky road, especially if it’s this White Chocolate Rocky Road that one of our readers submitted. It’s a five minute dessert that is perfect if you’ve left preparation too late but you still want to make an impression, and it’s a hit with everyone!
We particularly like the white chocolate variety because it makes it easy to add some shredded coconut to the mix, which cuts down on the sickly sweetness of this particular dessert.
Method

Prep a baking tray about 18 x 28cm by laying baking paper on the bottom and sides, making sure there's a few cm of overhang to allow you to remove the rocky road once it's set.

Using kitchen scissors cut up the marshmallows and the raspberry liquorice. This is much easier than using a knife as both are quite sticky when cut. Set aside.

Put the white chocolate in a microwave safe bowl and melt on a lower setting, stirring every 30-60 seconds until smooth.

Put the cut up marshmallows, liquorice and shredded coconut in a bowl and stir to combine. Pour over the melted white chocolate and mix until chocolate coverage is even. Press the mixture into you baking tray and pop in the fridge to set for 1-2 hours. To serve remove the rocky road from the pan and cut into small squares.
