Sticky Date Pudding in a Mug is a one cup wonder.
It is a lovely, tender and buttery dessert.Yummy with a dollop of cream or a scoop of vanilla ice cream on top!
Method

Place the chopped dates, butter and water in a microwave safe bowl or jug

Place in microwave for 1 minute until the dates are softened.

Mix in the bicarb soda to break up the dates

Add the sugar, egg and flour and mix to combine thoroughly

Spoon into two mugs

Place both mugs in the microwave 1 minute and 20 seconds

To make the caramel sauce put sugar, vanilla, butter and milk in a microwave safe bowl/jug and place in the microwave for 20 seconds

Remove and stir and repeat 2 more times.

The sugar should be dissolved and the sauce smooth.

As microwaves heat differently, you may need to heat for another 20 seconds if it is not smooth.

Allow to cool for 5 minutes then either drizzle over the puddings and enjoy or tip the puddings out onto a plate, drizzle with the caramel sauce and add a scoop of ice cream or cream.
