In a medium bowl beat together the cream cheese, icing sugar and vanilla. Fold through 1 1/3 cup of your whipped cream, and set aside.

Take your sponge fingers and dip them into the coffee, ensuring the biscuits get well dunked. Halve these and evenly distribute them into four parfait glasses.

Spoon about 3/4 of the cream cheese mix on top of the sponge fingers. Then add the rest coffee-dunked sponge fingers, the rest of the cream cheese mixture, and the remainder of the whipped cream.

Garnish with strawberry jam, blueberries, and some basil for tang.
