Raspberry Dairy Free Ice Cream. Most people that have had to give up on dairy foods would probably miss ice cream the most.
And until recently I didn’t even know that it was possible to make ice cream without it! It tastes just like a soft-serve Ice Cream, only better.
Method

In a blender place the sugar and the frozen raspberries and pulverise until all there are no lumps.

Whip the two egg whites until stiff peaks are formed then fold into your raspberries and sugar mixture.

Spoon into dessert cups and serve with mint sprigs.

- You can use any berries or frozen fruit you like.
