  • 1/2 cup Plus 2 Tablespoon Thickened Cream
  • 1/4 cup Light Corn Syrup
  • 2 tbsp Honey
  • 255 g 70% Cocoa Chocolate finely chopped
  • 2 tbsp Bourbon
  • 1.5 cups Pecans toasted and finely chopped
  • 2 cups Shortbread Biscuits crushed into crumbs in the food processor
  • 1/4 cup Caster Sugar

Bourbon Pecan Bonbons are basically royalty food. They are heavenly bites of chocolate-covered sweets!

Bonbon refers to any kind of sweets, particularly small candies covered in melt-in-your-mouth, rich and decadent chocolate. It was said to originate in France, made to be served at the French Royal Court in the 17th century.

This homemade bonbon recipe is no less heavenly. Dainty Bourbon Pecan Bonbons have just enough chocolate and bourbon beautifully mixed together with pecans to make them taste just as rich. It’s one classic dessert!

These bonbons are truly delicious and satisfying and I can already see you wanting for more!

Dainty Bourbon Pecan Bonbons

Method

  1. Place the chocolate in a large mixing bowl. In a small saucepan, combine the cream, corn syrup and honey. Bring to boil then remove from heat.

  2. Pour the cream mixture over the chocolate. Let it stand for a minute while the chocolate is melting. Stir and make sure that the chocolate is fully melted.

  3. Stir in the bourbon, 1 cup pecans and the crushed shortbread biscuits.

  4. The mixture will still be rather runny and soft-looking. Chill for an hour in the fridge until the chocolate has firmed up.

  5. Add 1/4 cup caster sugar and the remaining 1/2 cup pecans in the food processor and pulse a few times. Make sure that the pecans are nearly ground and well-mixed into the sugar. Put the sugar in a shallow bowl or on a plate.

  6. Scoop rounded tablespoonfuls of the chocolate and roll into a ball. Roll the chocolate ball through the sugar-pecan mixture, then repeat with the rest.

Recipe Hints and Tips:

  • Bourbon Pecan Bonbons are not suitable for freezing so better make just enough for eating.
