Crispy Chicken Rolls make a great dinner dish but are also great as party snack foods, as they can be made into any size you like!
Method

Heat your oven to 180 degrees C and lightly grease an oven tray

Mix chutney, sour cream and spring onions in a bowl until combined well

Lay out one sheet of filo pastry and place another sheet on top. Fold in half lengthways

Place a chicken breast at one end of the pastry and spoon 1/4 of the chutney mix onto the chicken.

Roll the pastry once over the chicken, fold the sides over and keep rolling to make a parcel.

Repeat this process to make 3 more chicken parcels

Place the parcels on the oven tray and brush with the melted butter

Bake for 20 mins or until golden brown. Serve hot with salad or steamed vegetables.
Recipe Hints and Tips:
- Crispy Chicken Rolls are suitable to freeze for up to four weeks.
- You don't have to use mango chutney - this recipe would be lovely with tomato chutney or fruit chutney too!
